What You’ll Need

  • 2 cups of Elephant Foot Yam (cubed and boiled)
  • 2 tablespoon Olive Oil
  • 1 teaspoon Mustard Seeds
  • 1 teaspoon Cumin Seeds
  • 1 large Onion (finely chopped)
  • 2 Green Chilies (finely chopped)
  • 1 tablespoon Ginger Garlic Paste
  • 2 medium Tomatoes (pureed)
  • 1/2 teaspoon Turmeric Powder
  • 1 tablespoon Coriander Powder
  • 1/2 teaspoon Garam Masala
  • 1/2 teaspoon Red Chili Powder
  • 1 cup of Coconut Milk
  • Salt (to taste)
  • 2 tablespoons fresh Coriander Leaves (for garnish)
  • 6 cup Cooked Rice (for serving)

Method

Step One

Heat the olive oil in a large pan over medium heat. Once the oil is hot, add the mustard seeds and cumin seeds. Stir them around in the oil until they start to splutter.

Step Two

Add the finely chopped onion and green chilies to the pan. Sauté these ingredients until the onion becomes translucent and the chilies are well cooked.

Step Three

Stir in the ginger garlic paste and cook it with the onion and chilies for a few more minutes, until the raw smell of the garlic is gone.

Step Four

Add the pureed tomatoes to the pan along with the turmeric powder, coriander powder, garam masala, and red chili powder. Combine these ingredients thoroughly and let them cook together for a few minutes.

Step Five

Add the boiled elephant foot yam to the pan. Stir it into the already cooking ingredients, making sure every piece of yam is well coated in the tomato and spice mixture.

Step Six

Pour the coconut milk into the pan and add salt to taste. Stir the curry well, then cover the pan with a lid and let the curry simmer for around 10 minutes. This will allow the flavours to meld together and the yam to take on all the flavours of the curry.

Step Seven

Garnish the curry with fresh coriander leaves just before serving.
