What You’ll Need
- 2 cups all-purpose flour
- 2 tablespoons white sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups buttermilk
- 1/2 cup milk
- 2 eggs
- 1/4 cup butter, melted
- 1 cup ensete bananas, mashed
- 1 cup blueberries (optional)
- Maple syrup for serving
Method
Step One
Combine the all-purpose flour, white sugar, baking powder, baking soda, and salt in a large bowl.
Step Two
In another bowl, mix together the buttermilk, milk, eggs, and melted butter.
Step Three
Gradually add the wet ingredients into the large bowl of dry ingredients. Stir until the batter is smooth with no clumps.
Step Four
Fold the mashed ensete bananas into the mixture. If you choose to add blueberries, gently fold them in at this stage too.
Step Five
Preheat a skillet over medium heat. Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on top, then flip and cook until the other side is golden brown.
