What You’ll Need

  • 2 cups of ensete roots, diced
  • 1 large red bell pepper, sliced
  • 1 large green bell pepper, sliced
  • 2 medium-sized carrots, julienned
  • 1 large onion, sliced
  • 3 cloves of garlic, minced
  • 2 tablespoons of vegetable oil
  • Salt to taste
  • 1 teaspoon of black pepper
  • 1 tablespoon of soy sauce
  • 1 tablespoon of oyster sauce
  • 1 cup of pineapple chunks
  • 1 cup of diced mango

Method

Step One

Firstly, prepare your ingredients. Dice 2 cups of ensete roots. Slice 1 large red bell pepper and 1 large green bell pepper. Julienne 2 medium-sized carrots. Slice 1 large onion and mince 3 cloves of garlic. Set these all aside.

Step Two

Heat 2 tablespoons of vegetable oil in a large frying pan or wok over medium to high heat. Once the oil is hot, add the sliced onion and minced garlic. Sauté them until they’re fragrant and the onion becomes translucent. This usually takes about 2 to 3 minutes.

Step Three

Add the diced ensete roots, sliced peppers, and julienned carrots to the pan. Stir them into the onions and garlic. Cook these for several minutes until they’re partially cooked and the ensete roots start to soften.

Step Four

Season everything in the pan with salt to taste, and add 1 teaspoon of black pepper, 1 tablespoon of soy sauce, and 1 tablespoon of oyster sauce. Stir well to combine everything and cook for another few minutes.

Step Five

Add 1 cup of pineapple chunks and 1 cup of diced mango to the pan. Stir them into the other ingredients and cook for another 2 to 3 minutes, or until the fruits start to soften and their flavors begin to meld with the other ingredients.

Step Six

After everything is well combined and cooked, switch off the heat. Serve the stir-fry hot atop a bed of rice or with a side of naan for a hearty, flavorful meal.
