What You’ll Need

  • 2 cups of White Rice
  • 4 cups of Water
  • 1 tablespoon of Epazote Leaves (finely chopped)
  • 1 tablespoon of olive oil
  • 1 teaspoon of Salt
  • 1 Lime (for zest)
  • 1/4 cup of chopped Fresh Cilantro

Method

Step One

Begin by rinsing the 2 cups of white rice under cold water until the water runs clear. This is to remove any excess starch from the rice which helps in ensuring it doesn’t stick together as it cooks.

Step Two

In a large pot, add the 4 cups of water, 1 tablespoon of finely chopped Epazote leaves, and 1 teaspoon of salt. Bring the water to a boil.

Step Three

Add the rinsed rice to the boiling water. Reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes, or until the rice has absorbed all the water.

Step Four

While the rice is cooking, zest 1 lime and chop 1/4 cup of fresh cilantro. Set both aside.

Step Five

When the rice is cooked, remove it from the heat. Add 1 tablespoon of olive oil, the lime zest, and chopped cilantro to the rice. Stir everything together well, ensuring the ingredients are also evenly distributed throughout the rice.

Step Six
