What You’ll Need

  • 1 cup Fat Hen (Lamb’s Quarters), washed and chopped
  • 2 lbs Chicken, cut into pieces
  • 2 large Onions, chopped
  • 3 cloves Garlic, minced
  • 2 large Tomatoes, chopped
  • 2 large Carrots, chopped
  • 1 cup Peas
  • 2 large Potatoes, cubed
  • 4 cups Chicken Broth
  • 1 cup White Wine
  • 2 tbsp Olive Oil
  • Salt and Pepper to taste
  • 1 tsp Thyme
  • 1 tsp Rosemary

Method

Step One

Heat the olive oil in a large pot over medium heat. Add the chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set aside.
