What You’ll Need
- 1 cup Fat Hen (Lamb’s Quarters), washed and chopped
- 2 lbs Chicken, cut into pieces
- 2 large Onions, chopped
- 3 cloves Garlic, minced
- 2 large Tomatoes, chopped
- 2 large Carrots, chopped
- 1 cup Peas
- 2 large Potatoes, cubed
- 4 cups Chicken Broth
- 1 cup White Wine
- 2 tbsp Olive Oil
- Salt and Pepper to taste
- 1 tsp Thyme
- 1 tsp Rosemary
Method
Step One
Heat the olive oil in a large pot over medium heat. Add the chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set aside.
