What You’ll Need

  • 1 1/2 pounds of large shrimp, peeled and deveined
  • 3 ears of fresh corn, husked
  • 1 cup of crumbled feta cheese
  • 2 cups of cherry tomatoes, halved
  • 2 avocados, diced
  • 1/2 cup of fresh basil leaves, chopped
  • 1/2 cup of olive oil
  • 2 tablespoons of lemon juice
  • 2 cloves of garlic, minced
  • 1 teaspoon of red chili flakes
  • Salt and black pepper to taste
ALLERGENS: Shellfish (shrimp), milk (feta cheese), garlic

Method

Step One

Start by preheating your grill to medium-high heat. Once hot, grill your corn until it is cooked and charred in some areas, approximatively for 10 minutes. Remove the corn from the grill and let it cool down.

Step Two

While your corn is cooling, skewer your shrimp and drizzle it with a bit of olive oil. Season with salt and pepper. Grill the shrimp for about 2 minutes each side or until they’re pink and slightly charred.

Step Three

After the corn has cooled, slice the kernels off of the cobs. Add these to a large salad bowl along with the grilled shrimp, chopped tomatoes, diced avocados, and crumbled feta.

Step Four

For the dressing, whisk together the olive oil, lemon juice, minced garlic, red chili flakes, and chopped basil in a small bowl. Season it with salt and black pepper to your liking.

Step Five
