But life’s true essence is growth, and in my food journey, stepping out of my comfort zone led me to the diversified world of ethnic flavors, notably, the rich and robust cuisine of Thailand.

The inspiration for this dish came after a friendly exchange with Thai cuisine maestro, Chef Pim Techamuanvivit. Infusing my knowledge about fish dishes and the simplicity of mountain fare, I created this unique take on a classic Thai dish, Fish and Stir-Fried Greens in Ginger Oyster Sauce.

What You’ll Need

  • 2 lb white fish fillets
  • 1 tsp salt
  • 1 tsp ground pepper
  • 2 tbsp vegetable oil
  • 6 cups of mixed greens (bok choy, spinach, Chinese broccoli)
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, peeled and minced
  • 1/4 cup oyster sauce
  • 1 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tbsp sugar
  • 2 tbsp cornstarch mixed with 2 tbsp water
  • 1/2 cup chicken broth
  • 2 green onions, chopped
  • 1 red bell pepper, sliced
  • Sesame seeds for garnish
ALLERGENS: Fish, soy, oyster, sesame

Method

Step One

Firstly, season the white fish fillets with the 1 tsp of salt and 1 tsp of ground pepper. Set it aside for the spices to absorb into the fish.

Step Two

In a large pan, heat 2 tbsp of vegetable oil over medium heat. Once heated, place the fish fillets onto the pan and cook until it is golden and crisp on each side (approximately 3-5 minutes per side). Afterwards, remove the fish and place them on a plate to rest.

Step Three

Using the same pan, add the 6 cups of mixed greens, 2 cloves of minced garlic, and 1 tbsp of minced fresh ginger. Sauté on medium heat for about 2-3 minutes, until the greens are slightly wilted.

Step Four

Add 1/4 cup of oyster sauce, 1 tbsp of fish sauce, 1 tbsp of soy sauce, and 1 tbsp of sugar into the pan. Stir the mixture well to ensure all the greens are coated with the sauce. Cook for another 1-2 minutes.

Step Five

Stir in the cornstarch mixed with water into the pan. This will thicken up the sauce. After that, pour the 1/2 cup of chicken broth in and keep stirring until everything is well combined.

Step Six

Now, add back the cooked fish fillets into the pan and gently coat them with the sauce. Add the 2 chopped green onions and the sliced red bell pepper. Let this simmer for another 2-3 minutes, so that the flavors can infuse together.

Step Seven

Finally, serve the dish hot, garnished with sesame seeds. Enjoy the hearty and flavorful Fish and Stir-Fried Greens in Ginger Oyster Sauce.
