Every now and again, I come across a recipe that warms my insides just thinking about it, and this Fish Bhujari is undoubtedly one of those special dishes. It’s a dance of flavors. Finding Inspiration from Across the Seas

Given my frequent travels to Japan, crossing the culinary borders is a bit of a habit. Nevertheless, what appealed to me most about Fish Bhujari wasn’t how it connected to my routine sushi making, but how it stood as a beacon of something completely different. Its roots trace back to the Indian subcontinent, which is full of colorful and aromatic dishes just like this one. However, it does remind me of a similar dish inspired by an exceptionally talented chef, Chef Vikas Khanna, who is known to blur the boundaries between different cuisines.

The Harmony of Flavors

What makes Fish Bhujari so impressive is the layering of flavors. It starts with white fish fillets, delicately prepared with a sprinkle of turmeric and a good squeeze of fresh lemon juice. This initial step almost mirrors the Japanese way of handling and treating fish, albeit with a unique Indian twist. From there, it picks up pace, introducing a myriad of spices, each contributing its own character to the dish.

Bhujari reminds me of the classic Seafood Al Ajillo from Spain, mainly due to its fundamental ingredient – fish – but also due to the use of lemon, which adds a tangy aspect to both dishes. Yet, the Fish Bhujari stands alone in its uniqueness thanks to the abundance of Indian spices such as coriander, fennel, and mustard seeds, among others.

Perfect Combinations

One can savor this Fish Bhujari as a standalone dish, but I have found that it pairs wonderfully with a simple portion of sweet potato burrito, as the sweetness of the burrito helps balance the robust flavors of the Bhujari. Or, for an authentic Indian experience, serve it alongside some homemade naans and Jeera rice.

What You’ll Need

  • 6 pieces white fish fillets
  • 1 tablespoon turmeric powder
  • 2 tablespoons lemon juice
  • 3 tablespoons mustard oil
  • 2 medium onions, finely chopped
  • 5 cloves garlic, finely chopped
  • 1 inch fresh ginger, grated
  • 3 green chilies, sliced
  • 1 tablespoon cumin seeds
  • 1 tablespoon mustard seeds
  • 3 tablespoons poppy seeds
  • 1 tablespoon fennel seeds
  • 1 tablespoon coriander seeds
  • 1/2 teaspoon red chili powder
  • 1/4 teaspoon black pepper powder
  • 1 cup chopped fresh cilantro (coriander leaves)
  • 2 tablespoons chopped fresh mint leaves
  • Salt, to taste
  • Fresh lemon slices, for garnish
ALLERGENS: Fish, Mustard oil, Mustard seeds

Method

Step One

Marinate the fish fillets with turmeric powder, salt, and lemon juice for about 20 minutes.

Step Two

Heat mustard oil in a pan and fry the fish fillets lightly on both sides. Once done, remove and set the fillets aside.

Step Three

In the same pan, add chopped onions, garlic, and grated ginger. Saute until the onion turns brown.

Step Four

Add sliced green chilies, cumin seeds, mustard seeds, poppy seeds, fennel seeds, and coriander seeds to the pan. Stir well for a few minutes to release the flavors.

Step Five

Next, add red chili powder, and black pepper powder to the pan, stirring well to mix them in.

Step Six

Now, add the lightly fried fish fillets back into the pan and cover them with the spice mixture.

Step Seven

Lower the heat and let the fish simmer in the spices for about 10 minutes.

Step Eight

Finally, garnish the dish with freshly chopped cilantro, mint leaves, and fresh lemon slices.

Step Nine

Serve the Fish Bhujari hot and enjoy it with your favorite side dish.
