What You’ll Need

  • 1 large fish head, cleaned and cut into manageable pieces
  • 3 cups of fava beans, fresh or frozen
  • 5 tablespoons of vegetable oil
  • 4 cups of cooked jasmine rice, cooled and grains separated
  • 6 cloves of garlic, minced
  • 3 green onions, chopped
  • 1 red bell pepper, chopped
  • 2 eggs, beaten
  • 2 tablespoons of soy sauce
  • 1 tablespoon of sesame oil
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish

Method

Step One

Begin by preparing the fish head. Ensure it’s clean and cut it into manageable pieces.

Step Two

Defrost your fava beans if they are frozen. If they are fresh, clean and prepare them for cooking.

Step Three

Heat the vegetable oil in a large wok or frying pan over medium-high heat. Add the fish head pieces and season with salt and pepper. Saute until the fish is cooked through and lightly browned, about 5-7 minutes. Remove the fish from the wok and set it aside.

Step Four

Still using the same wok, add the minced garlic and saute until aromatic. Next, introduce the chopped green onions and red bell pepper to the wok and stir-fry for about 2 minutes.

Step Five

Add the cooked rice to the wok and stir well to combine all the ingredients. Make a well in the center of the rice and pour in the beaten eggs. Allow the eggs to cook for a minute before stirring them into the rice. Cook until the eggs are fully done.

Step Six

Add the fava beans, cooked fish head pieces, soy sauce, and sesame oil. Mix well and continue to cook for another 2 minutes. Ensure everything is evenly distributed.

Step Seven
