What You’ll Need

  • 6 fillets of white fish (about 6 ounces each)
  • 4 Serrano chilies, seeds removed and finely chopped
  • 1 large white onion, finely chopped
  • 3 cloves of garlic, minced
  • 2 large tomatoes, diced
  • 1/2 cup chopped fresh cilantro
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • 2 cups of Mexican beer
  • 1/2 cup of fresh lime juice
  • 1/2 teaspoon of oregano
  • 1/2 teaspoon of cumin

Method

Step One

Start off by seasoning your white fish fillets with salt and pepper to taste.

Step Two

Next, heat up your olive oil in a large pan over medium heat.
Once the oil is hot, add in your finely chopped Serrano chilies, white onion, and minced garlic. Sauté these until they become fragrant and the onions turn translucent.

Step Three

Now, it’s time to add your diced tomatoes to the pan. Cook these until they soften and release their juices.

Step Four

At this point, you’ll want to pour in your Mexican beer and fresh lime juice. Allow this mixture to simmer for about 10 minutes or until the liquid is reduced to half.

Step Five

Add in your oregano and cumin to the pan and stir well so that the flavors can mingle.

Step Six

Now, place your fillets into the pan. Make sure to spoon over some of the sauce onto the top of each fillet. Cover the pan and let it cook for about 10 to 15 minutes or until the fish is cooked through.

Step Seven

To finish, remove your pan from the heat and sprinkle with your chopped fresh cilantro.
