What You’ll Need

  • 2 lb White Fish Fillets
  • 6 Guajillo Chilies, dried
  • 2 Chipotle Peppers, dried
  • 4 Tomatoes, medium-sized
  • 4 Garlic Cloves
  • 1 Onion, large
  • 2 cups Fish Stock
  • 3 tablespoons Olive Oil
  • 2 Bay Leaves
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 teaspoons Mexican Oregano
  • 1 bunch Cilantro, fresh
  • 2 Limes, juiced
ALLERGENS: Fish, Garlic

Method

Step One


Begin by placing your dried Guajillo Chilies and Chipotle Peppers in a bowl. Pour hot water over the top, soaking them until they become soft and pliable.

Step Two


While your chilies are soaking, chop your Onions, Garlic and Tomatoes.

Step Three


Once your chilies have softened, drain the water and remove the seeds and stems.
Next, add the chilies, chopped onions, garlic, tomatoes and 1 cup of Fish Stock into a blender. Blend everything together until a smooth sauce forms.

Step Four


Heat 3 tablespoons of Olive Oil in a large pan.
Pour the sauce from the blender into the pan. Add your Mexican Oregano, Bay Leaves, Salt and Black Pepper. Bring the sauce to a simmer and cook for 15 minutes, stirring every now and then.

Step Five


Add the White Fish Fillets into the pan with the sauce. Ensure the fillets are coated well in the sauce.

Step Six


Pour the remaining Fish Stock into the pan, cover it and let it simmer for 10-15 minutes, or until the fish is fully cooked.

Step Seven


Once the fish is cooked, remove the pan from the heat. Squeeze fresh Lime juice over the top and garnish with fresh Cilantro before serving.
