This recipe reminds me of the way my Salsa dance students react when they first master a complex sequence – an undeniable burst of joy and accomplishment.
The Chef Behind the Inspiration
To create this intricate recipe, I took inspiration from a chef I highly admire for his innovative and tantalizing creations, Gordon Ramsay. As Ramsay often demonstrates, cooking is not just about following a list of ingredients but also engaging in a sensory journey, an experience I aspire to offer with each recipe.

What You’ll Need
- 2 pounds of fish fillets
- Salt to taste
- 1/2 teaspoon turmeric powder
- 2 tablespoons sunflower oil
- 1 large onion, finely chopped
- 1 tablespoon ginger-garlic paste
- 2 green chilies, sliced
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 2 teaspoon coriander powder
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 2 cups of tomato puree
- 1 cup water
- 1/2 cup fresh cilantro, chopped
- 1 teaspoon garam masala
- 2 tablespoons lemon juice
Method
Step One
Start by cleaning and washing the fish fillets. Pat them dry and sprinkle salt and 1/2 teaspoon of turmeric powder evenly over them. Gently rub the seasonings into the fillets and set them aside for 15 minutes to marinate.
Step Two
In a large skillet, heat up the sunflower oil over medium heat. When the oil is hot, add the fish fillets and fry them until they are golden brown on both sides. Once done, remove the fillets from the skillet and set them aside.
Step Three
In the same skillet, add the chopped onion, ginger-garlic paste, and sliced green chilies. Sauté these until the onions become translucent.
Step Four
Next, add the cumin seeds and mustard seeds to the skillet. Stir these in and let them cook until they begin to pop.
Step Five
Then, add the coriander powder, 1 teaspoon of turmeric powder, and red chili powder to the skillet. Stir these well to evenly coat the onions. Then, cook for another two minutes, allowing the spices to release their flavors.
Step Six
Add the tomato puree to the skillet, stir and let it simmer for a few minutes. Then, add the 1 cup of water and bring the gravy to a boil. Reduce the heat and let the gravy simmer for about 10 minutes, or until it thickens.
Step Seven
With the gravy still simmering, add the fried fish fillets back into the skillet. Let these simmer in the gravy for 5 minutes to absorb the flavors. Be careful not to overcook the fish, as it might become tough and lose its moisture.
Step Eight
Turn off the heat and add the chopped cilantro, garam masala, and lemon juice to the fish. Stir gently to mix without breaking the fish fillets. Cover the skillet and let it sit for another 5 minutes to allow the flavors to meld together.
Step Nine
Your Fish in Tomato Gravy is now ready to be served. Enjoy this dish hot with a side of rice or bread for a delicious meal.
