What You’ll Need
- 2 pounds of any white fish fillets
- 2 cups of plain yogurt
- 1 cup of cashews, soaked in water
- 2 medium onions, finely chopped
- 4 cloves of garlic, minced
- 1 inch piece of ginger, grated
- 1 teaspoon of turmeric powder
- 1 teaspoon of red chili powder
- 1 teaspoon of coriander powder
- 2 tablespoons of vegetable oil
- 1 cup of water
- 2 green chilies, slit
- 1 large bay leaf
- 4 green cardamom pods
- 1 teaspoon of garam masala powder
- Salt, to taste
- Chopped coriander leaves, for garnish
Method
Step One
Heat the vegetable oil in a pan. Once the oil is hot, add the finely chopped onions, minced garlic, and grated ginger. Cook until the onions become golden brown in color.
Step Two
Add the turmeric powder, red chili powder and coriander powder to the pan. Stir well and sauté for a minute.
Step Three
Drain the cashews from the water and blitz in a food processor or blender to form a smooth paste. Add this cashew paste to the pan and cook for around 2-3 minutes.
Step Four
Pour the plain yogurt into the pan and mix well. Keep stirring the mixture on low heat until it starts to boil.
Step Five
Once the gravy starts boiling, add the fish fillets to the pan. Also add the slit green chilies, bay leaf and cardamom pods. Cook for around 5-7 minutes or until the fish is cooked thoroughly.
Step Six
Add the water and salt to taste to the pan and stir well. Continue cooking for another 5 minutes on low heat.
Step Seven
Once the cooking is done, sprinkle the garam masala powder over the fish and stir gently. Turn off the heat and let the dish rest for a while to let the flavors merge.
Step Eight
Garnish with chopped coriander leaves before serving. Your Fish in Yogurt Cashew Sauce is ready to eat. This dish pairs well with basmati rice or naan bread.
