Through my years of crafting dishes that are not just comforting but also health-conscious, I’ve come to realize that there’s something about the wholesome goodness of fresh ingredients paired with global flavors that deeply satisfies.
From my childhood in the sun-drenched valleys of California, all the way to my kitchen now as an adult, I’ve always had a love for vibrant dishes. Food that not only appeals to the palate, but also delivers a successful punch of nutritional value. And these Vietnamese spring rolls, filled with a diversity of fruits and the tang of fish mint, are my way of bringing that to your table.
The Power of Fresh Ingredients
One of the reasons why I adore this Fish Mint Vietnamese Spring Rolls recipe is the freshness of its ingredients. The mint leaves, avocados, and cucumber genuinely play a vital role in creating a health-giving, palate-cleanse. Their individual benefits range from high nutrient content to the ability to aid digestion, which aligns perfectly with my West Coast upbringing’s focus on wellness.
Plus, if you aren’t familiar with the incredible benefits of fish mint – it’s about time! This aromatic herb is not only packed with antioxidants but also carminative properties that promote proper digestion. It’s a real gem in the world of superfoods.
Perfect Complementary Dishes
Another reason why these Vietnamese spring rolls have won my heart is their versatility. They make a stunning appetizer, a light lunch or even a vibrant addition to your dinner table. Make them the star of the show or team them up with other dishes.
They pair divinely with flavorful Southeast Asian dishes like a piping hot bowl of Pho Ga (Chicken Pho) or a crispy Vietnamese Style Chicken Salad with Fresh Herbs and Fried Garlic Chips for a complete, balanced meal.
Finally, the magic in any recipe lies not just in the ingredients or the method, but the love with which it is created. Sharing the love for wholesome and delicious food through these delightful spring rolls warms my heart. And I hope it warms yours too, one bite at a time.
What You’ll Need
- 12 large rice paper wrappers
- 1 lb cooked and shredded chicken
- 2 cups fish mint leaves, thoroughly washed
- 1 large cucumber, julienned
- 2 large carrots, julienned
- 1/2 cup shredded purple cabbage
- 3 cups mixed salad leaves
- 2 ripe avocados, sliced
- 1/2 cup fresh cilantro, chopped
- 1/2 cup fresh mint leaves, chopped
- 1/4 cup sesame seeds (optional)
- For the dipping sauce:
- 1/4 cup hoisin sauce
- 1/4 cup peanut butter
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 2 tablespoons warm water
Method
Step One
Start by preparing all your ingredients. The chicken should be cooked and shredded, the cucumber and carrots julienned, and the cabbage, avocados, cilantro and mint leaves should all be prepped and ready to use.
Step Two
Next, assemble the spring rolls. Soak the rice paper wrappers in warm water one at a time until they become pliable. Lay the wrapper on a clean flat surface.
Step Three
Place a handful of salad leaves in the center of the wrapper. Top this with a good amount of fish mint leaves, followed by a slice of avocado, a few pieces of cucumber and carrot, some shredded chicken, a pinch of shredded cabbage, and a sprinkling of fresh cilantro and mint.
Step Four
Fold over the sides of the rice paper wrapper and then roll up the wrapper from the bottom, tucking in the ingredients as you go along to create a tight roll.
Step Five
Repeat this process with the remaining wrappers and ingredients. If you’re using sesame seeds, roll the finished spring rolls in the seeds for extra texture and crunch.
Step Six
Finally, prepare the dipping sauce by combining the hoisin sauce, peanut butter, soy sauce, lime juice, and warm water in a bowl. Stir well until smooth.
Step Seven
Serve the spring rolls with the dipping sauce on the side. Enjoy your flavorful and healthy Fish Mint Vietnamese Spring Rolls!
