Hello, friends! I’m excited to share with you a recipe that I absolutely adore. The dish I’m about to introduce you to is the delicious Fish Skewers with Ancho Lime Yogurt Marinade. Fish Skewers with Ancho Lime Yogurt Marinade

A Culinary Fusion I Can’t Resist

I’ve always loved the spicy zing that Mexican cuisine brings and marrying it with fresh, succulent seafood is a match made in culinary heaven. Yes, New England’s seafood is unmatched, and there’s something incredibly enticing about pairing it with a twist of Mexican flavor. A major influence behind this for me was chef Rick Bayless, an authority on Mexican cuisine. His approach to food has encouraged me to step outside of my comfort zone, leading to tasty creations like these skewers.

Seafood and Spice

One of the reasons why I love this Fish Skewers with Ancho Lime Yogurt Marinade recipe so much is because it’s a delightful fusion of tangy, sweet, spicy, and savory flavors. The marinade is vibrant, yet it never overpowers the delicate taste of the fresh fillets – instead, it harmonizes with them.

I also appreciate how versatile this dish is. If you’re a fan of Mexican cuisine, you’ll find the marinade familiar – it’s similar to the one used in traditional Mexican fish tacos. Additionally, you can pair these skewers with a variety of dishes. I often serve them with a side of cilantro-lime rice or a simple Southwestern slaw for a well-rounded meal.

Whether it’s a casual dinner with Laura and our little one or a backyard barbecue with friends and family, this dish always seems to hit the spot. Not only is it incredibly flavorful and satisfying, but it also brings a sense of novelty to our dining experience. So, give it a try – I hope you enjoy it as much as we do!

What You’ll Need

  • For the Ancho Lime Yogurt Marinade:
    • 1 cup plain Greek yogurt
    • 2 tablespoons ancho chile powder
    • 1 tablespoon olive oil
    • Zest and juice of 2 limes
    • 2 cloves garlic, minced
    • 1 tablespoon honey
    • Salt, to taste
  • For the Fish Skewers:
    • 2 pounds fresh white fish fillets (such as halibut, cod or snapper), cut into 2-inch chunks
    • 2 bell peppers (any color), cut into 2-inch pieces
    • 1 large red onion, cut into 2-inch pieces
    • 6 wooden or metal skewers
ALLERGENS: Greek yogurt, fish, garlic, honey

Method

Step One:

To begin with, you need to prepare the Ancho Lime Yogurt Marinade. Take a medium sized bowl and blend together the plain Greek yogurt, ancho chile powder, olive oil, zest and juice of 2 limes, minced garlic and honey. Stir thoroughly until you get a smooth mixture. For tasting, add salt according to your preference. Set the bowl aside.

Step Two:

Now let’s get the white fish fillets ready. Slice the fillets into uniform 2-inch chunks. Then take the bell peppers and cut them into 2-inch pieces as well. Repeat the process with the large red onion also.

Step Three:

Once you have all the pieces ready, it’s time to thread them onto wooden or metal skewers. Start with a piece of fish, followed by a piece of bell pepper and then a piece of red onion. Repeat the process until the skewer is full, but remember to leave some space at both ends for handling the skewer.

Step Four:

After all the skewers are ready, generously brush them with the prepared Ancho Lime Yogurt Marinade you made earlier. Make sure to evenly coat all the ingredients on the skewer. You can also pour some marinade into a separate bowl for basting while you grill.

Step Five:

Finally, it’s time to grill! Place the skewers on a preheated grill and cook them for approximately 3-4 minutes on each side or until the fish is opaque and peppers begin to char slightly. You can also baste the skewers with the marinade occasionally.

Step Six:

Remove the skewers from the grill and let them rest for a couple of minutes before serving. Enjoy your Dish Skewers with Ancho Lime Yogurt Marinade while still warm.
