What You’ll Need

  • 1 pound white fish fillets
  • 12 small corn tortillas
  • 3 tablespoons olive oil
  • salt and pepper, to taste
  • 1 tablespoon lime juice
  • For the Spicy Chipotle Avocado Slaw:
  • 1 cup shredded red cabbage
  • 1 cup shredded green cabbage
  • 2 ripe avocados, pitted and peeled
  • 1 tablespoon chipotle pepper in adobo sauce
  • 1 tablespoon honey
  • 2 tablespoons lime juice
  • 2 tablespoons chopped fresh cilantro
  • salt and pepper, to taste

Method

Step One

Start by preparing the fish. Season the fish fillets with salt, pepper and 1 tablespoon of lime juice. Heat up 3 tablespoons of olive oil in a non-stick frying pan over medium heat. Once heated, add the fillets and cook for about 3-4 minutes on each side or until thoroughly cooked and flaky. Set the cooked fish aside.

Step Two

Next, move on to the tortillas. Heat up the tortillas according to the package instructions – either on a skillet or in the microwave. Keep them warm.

Step Three
