What You’ll Need

  • 6 oz. white fish fillets, like tilapia or cod
  • 12 tostada shells
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 2 cups canned black beans, drained and rinsed
  • 1 medium red bell pepper, diced
  • 1 medium onion, diced
  • 2 jalapeno peppers, seeded and finely chopped
  • 2 cloves of garlic, minced
  • 2 tbs. fresh lime juice
  • 1/2 cup fresh cilantro, chopped
  • 1 ripe avocado, sliced
  • 1 cup queso fresco or feta cheese, crumbled
  • 1 medium head of iceberg lettuce, shredded
ALLERGENS: Fish, gluten (in tostada shells), olive oil, garlic, queso fresco or feta cheese

Method

Step One

Season your white fish fillets with salt and pepper to taste. Afterwards, heat the olive oil in a large skillet. Once it’s hot, add the fish and cook each side for about 3 to 4 minutes until it’s flaky and cooked through. Set the cooked fish aside once done.

Step Two

While your fish is cooking, begin preparing your black bean salsa. In a large bowl, combine the rinsed black beans, diced red bell pepper, diced onion, finely chopped jalapeno peppers, minced garlic, and fresh lime juice. Stir everything together until well mixed.

Step Three

Add the chopped cilantro to your black bean salsa and stir to incorporate. Now your salsa is ready for serving.

Step Four

Next, prepare your tostada shells. You can either buy pre-made shells or make them yourself. If you choose to make your own, simply fry corn tortillas in a pan with a bit of oil until they’re crispy.

Step Five

It’s time to assemble your tostadas! Start by putting a layer of shredded iceberg lettuce on each tostada shell. Then, add some of the black bean salsa on top.
