What You’ll Need

  • 2 lbs of fresh white fish fillets
  • 2 tablespoons of olive oil
  • 6 cloves garlic, minced
  • 1 large onion, chopped
  • 2 cups of fresh tomatoes, diced
  • 2 bell peppers, sliced
  • 2 carrots, sliced
  • 1 cup of green beans, trimmed
  • 1 cup of zucchini, diced
  • 2 teaspoons of ground coriander
  • 1 teaspoon of turmeric
  • 1 teaspoon of ground cumin
  • 1/2 teaspoon of ground black pepper
  • 1 teaspoon of salt
  • 1/4 cup of fresh lemon juice
  • 1/2 cup of fresh cilantro, chopped

Method

Step One

Begin by preparing all the ingredients: clean and pat dry the fish fillets, mince the garlic, chop the onion, dice the tomatoes and zucchini, slice the bell peppers and carrots, trim the green beans, and chop the cilantro. Set these aside for now.

Step Two

In a large skillet, heat the olive oil over medium heat. Once heated, add the minced garlic and chopped onion. Sauté until the onion is translucent and the garlic is fragrant, typically about 3-5 minutes.

Step Three

Add to the skillet the diced tomatoes, sliced bell peppers, sliced carrots, trimmed green beans, and diced zucchini. Mix well, then add the ground coriander, turmeric, cumin, black pepper, and salt. Stir to combine and cook for about 10-15 minutes until the vegetables are tender.

Step Four

Place the fresh white fish fillets on top of the softened vegetables. Pour the fresh lemon juice all over the fish and vegetables, then cover the skillet and let cook for about 10-15 minutes, until the fish is cooked through and flaky.

Step Five
