There’s a salsa that’s stolen my heart, and no, it’s not the dance, though you know I’m partial to a good beat! The Fresh Antipolo Salsa, a symphony of garden-fresh ingredients, is a recipe that takes me back to my roots with every bite. Borrowing its refreshing appeal from my Caribbean heritage and adorning it with the Spanish flair that’s been at the heart of my family’s recipes, this zesty concotion is truly a culinary gem.

Fresh Antipolo Salsa

Travel Through Taste

This Fresh Antipolo Salsa contains a vibrant assortment of ingredients that are not just a delight to the taste buds, but also a colorful feast for the eyes. Much like creating a beautiful dance routine, it’s all about finding that perfect balance of flavors, colors, and textures. With the wholesome crunchiness of the vegetables, balanced by the burst of freshness from fruits and the oomph of jalapenos, this salsa doesn’t just remind me of my travels through Spain and Cuba, but also speaks volumes about the rich tapestry of flavors found in these cultures.

Just as tapas are famous in the streets of Spain, typical salsas can be found accompanying a variety of dishes in the Caribbean. In keeping with tradition, this Fresh Antipolo Salsa pairs brilliantly with nachos, grilled chicken, seafood or even a simple omelette.

From its colors that will make your table pop, to its perfect melody of sweet, sour, and spicy notes, it truly is a labor of love from me to you. Bon appetit!

What You’ll Need

  • 5 ripe tomatoes, chopped
  • 1 large onion, finely chopped
  • 1.5 cup fresh pineapple, finely chopped
  • 1 cup fresh mango, finely chopped
  • 2 jalapeno peppers, seeds removed and finely chopped
  • 1 red bell pepper, finely chopped
  • 1/2 cup fresh cilantro, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons lime juice
  • Salt to taste
  • Cracked black pepper to taste
ALLERGENS: Onion

Method

Step One

Start by preparing all your ingredients. Chop your 5 ripe tomatoes, 1 large onion, 1.5 cup of fresh pineapple, 1 cup of fresh mango, 2 jalapeno peppers, 1 red bell pepper, and 1/2 cup of fresh cilantro. Finely chop the ingredients for the best texture. De-seed the jalapeno peppers to reduce their heat, and mince your 3 cloves of garlic.

Step Two

Take a large mixing bowl and combine the chopped tomatoes, onions, pineapple, mango, jalapeno peppers, red bell pepper, and cilantro. Be gentle when you mix them to keep the textures of your fruits intact.

Step Three

Add in the minced garlic to the mixture. The garlic adds a pungent kick that balances the sweetness of the fruits and the heat from the peppers.

Step Four

Stir in 2 tablespoons of fresh lime juice. The lime juice adds a tangy freshness that elevates the flavors of your salsa.

Step Five

Season your salsa with salt and cracked black pepper to taste. Remember to add these seasonings gradually, you can always add more, but you can’t take any out once they’re mixed into the salsa.

Step Six

Once everything is well mixed, let your Fresh Antipolo Salsa sit for about 10 to 15 minutes before serving. This allows the flavors to meld together. However, you can also enjoy it immediately if you prefer.
