What You’ll Need

  • 5 cups of fresh tomatoes, diced
  • 2 cups of vegetable broth
  • 1 cup of chopped fresh basil leaves
  • 1 large onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • 1 teaspoon of sugar
  • Salt and freshly ground black pepper to taste
  • 1/2 cup of heavy cream (optional)
  • Additional basil leaves for garnish (optional)

Method

Step One

Pour the blended soup back into the pot and return it to the heat. If you’re using the heavy cream, add it to the soup now and stir until it’s well incorporated. If you’re not using heavy cream, you can skip this step.

Step Six
