A taste of summer
There is nothing that screams more of summer than a bountiful harvest of juicy, ripe strawberries – the star of our Fresh Strawberry Pie. I like to think of this dessert as a celebration of the beautiful Southern summers, a time where the landscapes are painted with fields of this exquisite, vibrant fruit. It’s a delightful way of bringing the outdoors in – a slice of this pie is like a taste of summer on your plate.

Not only are strawberries delicious, but they are also loaded with health benefits. They’re an excellent source of vitamin C, manganese, folate and are packed with antioxidants. So believe it or not, indulging in this pie can also be part of taking care of your health!
Serving suggestions and pairings
This Fresh Strawberry Pie is a stand-alone star, but it can also work beautifully with various other dishes. I love serving it after an indulging Southern meal, for example, fried chicken and biscuits. This way, the fruity and refreshing flavors of the pie balance out the hearty, savory mains. It would also make a perfect match with a light, fruity white wine, think of a chilled glass of Sauvignon Blanc or a Moscato if you prefer it sweet.
Furthermore, this recipe is reminiscent of other fruit-based desserts like a classic strawberry shortcake or the traditional Southern peach cobbler. If you’re a fan of these, you’ll absolutely fall in love with this Fresh Strawberry Pie.
What You’ll Need
- 1 cup of white sugar
- 1 and 1/2 cups of water
- 3 tablespoons of strawberry flavored gelatin
- 4 tablespoons of cornstarch
- 1 quart of fresh strawberries, hulled
- 1/2 cup of heavy whipping cream
- 1 (9 inch) baked pie crust
Method
Step One
To start with, grab a medium-sized saucepan. Mix the sugar, water, cornstarch and strawberry flavored gelatin in the saucepan until they become smooth.
Step Two
Place the saucepan on medium heat. Frequently stir the mixture until it comes to boil. Keep stirring while it boils for a minute.
Step Three
After boiling for a minute, remove the saucepan from the heat. Let it cool down to room temperature.
Step Four
While waiting for the mixture to cool, prepare your strawberries. Remove the hulls and arrange them in the baked pie crust.
Step Five
After the gelatin mixture has cooled, pour it evenly over the arranged strawberries in the crust. Make sure all the strawberries are thoroughly coated.
Step Six
Moving forward, refrigerate the pie until the gelatin mixture sets completely. This process will generally take around two to three hours.
Step Seven
Once the pie is chilled and set, whip the cream until it forms firm peaks.
Step Eight
Serve your Fresh Strawberry Pie with the whipped cream on top. Enjoy!
