What You’ll Need

  • 6 Himbabaos (also known as Durian)
  • 4 cloves of garlic, minced
  • 1 cup of soy sauce
  • 1/2 cup of granulated sugar
  • 1/4 cup of cornstarch
  • 1/2 cup of water
  • Vegetable oil, for frying
  • 2 green onions, chopped (for garnish)
  • Sesame seeds, for garnish
ALLERGENS: Durian, garlic, soy, cornstarch

Method

Step One

First, prepare the Himbabaos by cutting them into small cubes. Be cautious while handling the fruit as it is known for its distinctive smell.

Step Two

Heat a fry pan or wok over medium-high heat and add enough vegetable oil to coat the bottom of the pan. Once the oil is hot, add the Himbabaos and fry until they become golden brown. This should take around 5-7 minutes. Once done, remove them from the pan and set aside.

Step Three

Using the same pan with the residual oil, add the minced garlic and sauté until they become fragrant. This should only take about a minute.

Step Four

In a bowl, mix the soy sauce, granulated sugar, cornstarch, and water. Stir until the sugar and cornstarch are completely dissolved. Pour this sauce into the pan with the garlic and cook until the sauce thickens.

Step Five

Add the fried Himbabaos back into the pan and stir until all the pieces are covered with the sauce. Cook for another two minutes, before removing from heat.

Step Six

Transfer the Fried Himbabaos with Garlic and Soy Sauce into a serving dish. Garnish with chopped green onions and sesame seeds before serving. Enjoy this unique and flavor-packed dish!
