What You’ll Need
- 6 pickerel fillets, approximately 4 oz each
- Salt and freshly ground black pepper to taste
- 1 cup all-purpose flour
- 1/4 teaspoon paprika
- 1 cup bread crumbs
- 2 large eggs, beaten
- Vegetable oil, for frying
- 6 buns, split and toasted
- 1/2 cup lettuce, shredded
- 2 medium tomatoes, sliced
- 1 small red onion, sliced
- 1 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon pickled relish
- 1 tablespoon lemon juice
- 1 tablespoon hot sauce
- 1 clove garlic, minced
- 2 tablespoons capers, chopped
- 1 teaspoon paprika
- Salt and black pepper to taste
Method
Step One
Start off by seasoning the pickerel fillets with salt and freshly ground black pepper according to your taste.
Step Two
In a shallow bowl, mix together the all-purpose flour and 1/4 teaspoon of paprika. In a separate bowl, place the beaten eggs and in a third bowl, the bread crumbs. Now, dredge each fillet first in the flour mixture, then in the beaten eggs and finally coat them with the bread crumbs flipping them to ensure they are fully coated.
Step Three
In a frying pan, heat the vegetable oil over medium heat. Once hot, add the breaded fillets and fry for about 3-4 minutes on each side until golden brown and crispy.
