What You’ll Need
- 2 cups Jasmine rice
- 1 lb shrimp, peeled and deveined
- 1 cup fresh celery leaves
- 2 large carrots, peeled and diced
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 large eggs
- 1/2 cup frozen peas
- 4 tablespoons vegetable oil
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 2 green onions, chopped
Method
Step One
Cook the jasmine rice according to the package instructions. Once cooked, spread it out on a tray and let it cool completely.
Step Two
Heat 2 tablespoons of the vegetable oil in a large pan or wok over medium-high heat. Add the shrimp and cook until they are pink and fully cooked. Set them aside.
Step Three
In the same pan, add another tablespoon of oil. Add the diced carrots, onion, and garlic. Stir-fry until they are soft and slightly caramelized.
Step Four
Push the vegetables to one side of the pan and crack the eggs into the other side. Scramble the eggs and cook until they are fully set.
Step Five
Mix in the cooled rice, peas, and celery leaves. Stir-fry for a few minutes until everything is well combined and heated through.
Step Six
Add the soy sauce, sesame oil, black pepper, and salt to the rice mixture. Stir to evenly distribute the seasonings.
Step Seven
Return the cooked shrimp to the pan and mix everything together.
Step Eight
