What You’ll Need

  • 2 cups of jasmine rice
  • 1 pound of raw shrimp, peeled and deveined
  • 1 bunch of Kai-lan (Chinese broccoli), roughly chopped
  • 3 cloves of garlic, minced
  • 2 eggs, lightly beaten
  • 1 large carrot, diced
  • 1 red bell pepper, diced
  • 1 cup of pineapple chunks
  • 1/4 cup of soy sauce
  • 2 tablespoons of vegetable oil
  • 2 spring onions, finely sliced
  • 1 teaspoon of sesame seeds, for garnish
  • Salt and pepper to taste
ALLERGENS: Shrimp, eggs, soy, sesame

Method

Step One

Cook the jasmine rice according to the instructions on the package. Once cooked, set it aside to cool.

Step Two

In a large frying pan or wok, heat the vegetable oil over medium heat. Once the oil is hot, add the minced garlic. Cook until it becomes fragrant but be careful not to burn it.

Step Three

Add the diced carrot and red bell pepper to the pan. Sauté until the vegetables start to become a bit tender.

Step Four

Increase the heat to medium-high and add the shrimp to the pan. Cook until they are pink and fully cooked, then remove them from the pan and set aside.

Step Five

Lower the heat to medium again and add the beaten eggs to the pan. Stir frequently and cook until the eggs are completely set.

Step Six

Add the cooked rice to the pan with the eggs. Mix well to combine all the ingredients. Then add the soy sauce and stir again to evenly distribute it.

Step Seven

Add the roughly chopped Kai-lan and pineapple chunks to the pan. Stir to combine everything and allow the Kai-lan to wilt slightly.

Step Eight

Return the cooked shrimp to the pan. Season everything with salt and pepper to taste, then stir well to combine. Cook for another 2-3 minutes to heat the shrimp through.

Step Nine
