What You’ll Need
- 2 cups of Jasmine rice
- 1 can (15.5 oz) of Ricebeans (or any beans of your liking)
- 3 tablespoons of vegetable oil
- 1 large onion, finely chopped
- 2 large carrots, finely chopped
- 2 cloves of garlic, minced
- 1 inch of fresh ginger, minced
- 1 cup of mixed vegetables (e.g., peas, corn)
- 2 large eggs, beaten
- 2 tablespoons of soy sauce
- 1 tablespoon of sesame oil
- 1 cup of mixed fruits (e.g., pineapple, diced apples, dice mango, etc.)
- Salt and pepper to taste
- Fresh cilantro for garnish
Method
Step One
Start by boiling your jasmine rice according to the package instructions. Make sure that your rice is not too sticky or wet, as it can impact the texture of your fried rice. Once the rice is cooked, let it cool and then set it aside.
Step Two
In a large frying pan or wok, heat up the vegetable oil over medium heat. Add the chopped onion, carrots, minced garlic, and ginger. Stir fry them until the onions become translucent and the carrots are tender.
Step Three
Drain your can of rice beans or other canned beans, and add them to the pan. Toss in your mixed vegetables as well, and continue stir frying for another few minutes.
Step Four
Push the vegetables and beans to one side of your pan, and pour the beaten eggs into the cleared space. Scramble the eggs and then mix them into the vegetables.
Step Five
Add the cooked rice to the pan, and stir everything together. Pour the soy sauce and sesame oil over the mixture, and give it another good stir to ensure everything is evenly coated.
Step Six
Finally, stir in your mixed fruits, and season your fried rice with salt and pepper to taste. Allow it to cook for a few more minutes, until the fruits are heated through.
Step Seven
Serve your Fried Rice with Ricebeans hot, garnished with a sprinkling of fresh cilantro on top. Enjoy this hearty and colorful dish!
