What You’ll Need

  • 2 cups of long grain white rice
  • 4 cups of water
  • 2 tablespoons of vegetable oil
  • 2 medium-sized onions, finely chopped
  • 2 cloves of garlic, finely chopped
  • 1 red bell pepper, finely chopped
  • 1 green bell pepper, finely chopped
  • 2 medium-sized carrots, finely chopped
  • 2 cups of frozen peas
  • 1 teaspoon of salt
  • 1/2 teaspoon ground black pepper
  • 3 tablespoons of soy sauce
  • 4 eggs, beaten
  • 6 spring onions, sliced thin

Method

Step One

Take the long grain white rice in a pot, add 4 cups of water and bring to a boil. Once boiling, reduce the heat to low, cover the pot and let it simmer till the rice is cooked. Then, set the rice aside to cool.

Step Two

Heat up 2 tablespoons of vegetable oil in a large wok or frying pan. Add the finely chopped onions, garlic, red bell pepper, green bell pepper, and carrots. Sauté these until they are softened.

Step Three

Once the vegetable mixture is cooked, add the frozen peas, salt, and ground black pepper. Stir these ingredients well and cook until the peas are heated through.

Step Four

To the vegetable mixture, add the cooked rice and 3 tablespoons of soy sauce. Keep stirring and tossing until everything is well combined and the rice grains start getting a little crispy.

Step Five

Push your rice and vegetable mix to one side of the pan and pour your beaten eggs into the other half. Begin scrambling the eggs and once they are cooked, mix everything together.

Step Six

Your fried rice is nearly done. To complete, sprinkle the thinly sliced spring onions across the top and give one final stir to mix them in.
