What You’ll Need

  • 2 cups of vital wheat gluten
  • 2 tablespoons of nutritional yeast
  • 1 teaspoon of onion powder
  • 1 teaspoon of garlic powder
  • 1 cup of vegetable broth
  • 2 tablespoons of soy sauce
  • 6 tablespoons of olive oil
  • 2 cups of sliced fresh mushrooms
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon of all-purpose flour
  • 1 cup of vegetable broth
  • 1/2 cup of dry white wine
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)

Method

Step One

Combine the vital wheat gluten, nutritional yeast, onion powder, and garlic powder in a large bowl and mix until well combined. This will be your seitan base.

Step Two

In a separate bowl, mix together the vegetable broth and soy sauce. Pour this mixture into your seitan base and stir until all the liquid is absorbed.
