What You’ll Need

  • 12 Friggitelli peppers
  • 3 tablespoons olive oil
  • 5 ripe tomatoes, finely chopped
  • 250g (approximately 9 ounces) Feta cheese, crumbled
  • 2 garlic cloves, minced
  • 1 tablespoon fresh basil, chopped
  • Salt to taste
  • Pepper to taste

Method

Step One

Start by washing the Friggitelli peppers, cut off the stalks then slit them lengthwise to remove the seeds, and set aside.

Step Two

In a large skillet, heat the olive oil over medium heat. Once the oil is hot, add the minced garlic and sauté it until it turns a light golden brown.

Step Three

Add the Friggitelli peppers to the skillet. Stir to mix well with the garlic. Cook over medium heat for about 10-15 minutes, until peppers are softened.
