What You’ll Need

  • 16 ounces of Garbanzo Bean Pasta
  • 2 cups of fresh tomatoes, diced
  • 1 large bell pepper, diced
  • 1 large onion, diced
  • 1 cup of kalamata olives, pitted

  • 4 tablespoons of extra virgin olive oil
  • 1 cup of feta cheese, crumbled
  • 1/4 cup of fresh basil, chopped
  • 1/4 cup of fresh parsley, chopped
  • Salt and freshly ground black pepper, to taste
  • Juice of 1 large lemon

Method

Step One

Start by boiling a large pot of salted water. Once the water is boiling, add the Garbanzo Bean Pasta and cook according to the package instructions until al dente. When done, drain and rinse the pasta under cold water to stop the cooking process. Set aside.

Step Two

In a large pan, heat the extra virgin olive oil over medium heat. Add the diced onion, bell pepper, and minced garlic. Sautee them until they become soft and fragrant which usually takes around 5-7 minutes.

Step Three

Add the diced fresh tomatoes to the pan. Cook them until they become slightly soft but still retains some texture. This typically takes around 3-4 minutes. Then, add the pitted kalamata olives and stir them into the mixture.

Step Four
