What You’ll Need

  • 24 large shrimp, peeled and deveined
  • 1/4 cup olive oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup dry white wine
  • 1 can (14 ounces) diced tomatoes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 cup feta cheese, crumbled
  • 3 tablespoons fresh parsley, chopped
ALLERGENS: shrimp, garlic, wine, tomatoes, feta cheese

Method

Step One

Begin by preparing your shrimp. Make sure they are clean, peeled and deveined. Set aside.

Step Two

Heat the olive oil in a large skillet over medium heat. Once the oil is hot, add the finely chopped onion and minced garlic to the skillet. Sauté the onion and garlic until they are softened and aromatic.

Step Three

Add the dry white wine to the skillet. Cook for a few minutes, allowing the alcohol to evaporate.

Step Four

Add the can of diced tomatoes to the skillet, followed by the salt, black pepper, dried oregano and crushed red pepper flakes. Stir well to combine all the ingredients, and allow the mixture to simmer for 10-15 minutes.

Step Five

Add the shrimp to the skillet, stirring to ensure that they are evenly distributed in the tomato sauce. Cook the shrimp in the sauce for about 5 minutes, or until they turn pink and are cooked through.

Step Six

Remove the skillet from the heat, and sprinkle the crumbled feta cheese over the top of the shrimp and tomato sauce. Allow the feta to melt slightly from the heat of the dish.

Step Seven

Garnish the dish with the freshly chopped parsley just before serving. A great way to enjoy this dish is with a side of warm bread to soak up the delicious sauce. Enjoy your Garides Saganaki!
