Garlic Mushroom Vegan Tacos

What You’ll Need

  • 12 small soft corn tortillas
  • 3 cups of assorted mushrooms, chopped (like cremini, shiitake, oyster)
  • 6 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1 medium red onion, finely chopped
  • 2 medium bell peppers, sliced
  • 1-2 jalapenos, finely chopped (optional, for heat)
  • 2 tablespoons of soy sauce
  • Salt and Pepper to taste
  • 1 lime, juiced
  • 1 cup of fresh cilantro, chopped
  • 2 avocados, peeled and sliced
  • 1 cup of vegan sour cream (optional topping)
  • 1 cup of salsa (optional topping)

Method

Step One

Begin by heating the olive oil in a large pan on medium heat. Once the oil is hot, add the finely chopped red onion, sliced bell peppers, and optional jalapenos. Saute these ingredients until they are softened and the onions have turned translucent. This process should take about 3-5 minutes.

Step Two

Next, add the minced garlic to the pan and continue to sauté until it becomes fragrant. Then, introduce the chopped assortment of mushrooms to the pan. Continue to cook these elements together, stirring occasionally until the mushrooms are golden and tender.

Step Three

Once the mushrooms are cooked, stir in the soy sauce and mix well. Season the mushroom mix with salt and pepper to taste. Make sure all the ingredients are well coated and let them cook for another minute. Next, squeeze in the fresh lime juice and stir well to combine.
