What You’ll Need

  • 3 cups of cooked jasmine rice
  • 1 lb of pork loin, thinly sliced
  • 6 cloves of garlic, minced
  • 1 large red bell pepper, chopped
  • 2 medium carrots, chopped
  • 1 large onion, chopped
  • 3 large eggs
  • 1 cup of frozen peas, thawed
  • 4 green onions, sliced
  • 1/4 cup of soy sauce
  • 2 tablespoons of oyster sauce
  • 1 tablespoon of fish sauce
  • 1-2 tablespoons of red pepper flakes (adjust for desired spiciness)
  • 2 tablespoons of vegetable oil
  • 1 tablespoon of sesame oil
  • Freshly ground black pepper to taste
  • Optional toppings: fresh cilantro and lime wedges
ALLERGENS: Eggs, Soy, Fish, Shellfish (oyster sauce)

Method

Step One

Heat the vegetable oil over medium heat in a large skillet or wok. Add the thinly sliced pork loin. Sauté until it’s cooked through and starts to brown. Remove the pork from the skillet and set it aside.

Step Two

In the same skillet, add the minced garlic, chopped red bell pepper, carrots, and onion. Sauté until the vegetables are soft and the onion is translucent.

Step Three

Push the veggies to one side of the skillet and crack the eggs into the cleared side. Scramble them with a spatula and cook until the eggs are fully cooked.

Step Four

Add the cooked jasmine rice to the skillet and mix everything together. Make sure the veggies and eggs are evenly distributed throughout the rice.

Step Five

Return the cooked pork to the skillet. Add the thawed peas and sliced green onions. Stir until everything is well mixed.

Step Six

Add the soy sauce, oyster sauce, fish sauce, and red pepper flakes to the skillet. Stir until everything is fully combined and the sauce evenly coats the rice and ingredients.

Step Seven

Stir in the sesame oil and freshly ground black pepper to taste. Taste and adjust seasoning if necessary.

Step Eight

Optional: Garnish with fresh cilantro and a squeeze of lime before serving.
