My love for the simplicity and flavor-packed profile of this delightful Garlic Roasted Lima Beans recipe never fades. Garlic Roasted Lima Beans

A Fresh Take on an Old Classic

A staple within my Irish family, lima beans, or what my grandmother fondly called “butter beans”, always found their function. However, the usual rendition was a simple boil or suspension in a soup. In this recipe, I give them a phenomenal Italian twist with a hearty roasting, bringing out their natural, subtly sweet flavors. They’re complemented with a rich, aromatic adornment of garlic, fresh lemon juice, and olive oil, taking them from humble to star status.

Health Benefits That Will Warm Your Heart

While our Garlic Roasted Lima Beans are a hit on the taste buds, they also pack in some significant health benefits. Lima beans are an excellent source of dietary fiber, aiding in digestion and lowering cholesterol levels. They are also loaded with protein, making them an excellent plant-based alternative for your protein needs. Olive oil, one of the treasured pillars of the Mediterranean diet, is rich in heart-healthy monounsaturated fats and can help reduce inflammation. [1]

A Recipe that Plays Well With Others

If you’re a fan of Italian cuisine, complementing it with some Linguine with Lemon-Herb Pesto would be a great idea, as both dishes share aromatic garlic and fresh lemon juice. For those seeking a vegetarian feast, these roasted lima beans coupled with a colorful, hearty salad or bruschetta are a delight.

What You’ll Need

  • 4 cups frozen lima beans
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • Salt to taste
  • Black pepper to taste
  • 1/2 lemon, juiced
  • 1 tablespoon parsley, chopped
ALLERGENS: None

Method

Step One

Preheat your oven to 400 degrees F (200 degrees C). While your oven is heating, spread out the frozen lima beans onto a baking sheet in a single layer.

Step Two

Drizzle the olive oil over the lima beans. Add the minced garlic to the beans and toss everything together until the beans are evenly coated in oil and garlic. Season with salt and black pepper to taste.

Step Three

Place the baking sheet in the preheated oven and roast the beans for about 20-25 minutes, or until they are crispy and golden brown. Make sure to stir the beans halfway through the cooking process to ensure they roast evenly.

Step Four

After the beans are done roasting, squeeze the juice from 1/2 a lemon over the beans. Stir to combine until the beans are evenly coated in the lemon juice.

Step Five

Finally, sprinkle the chopped parsley over the roasted lima beans before serving. Enjoy warm from the oven as a healthy and delicious side dish!
