Embracing Fusion and Uniqueness

Being an Indian-American fusion chef, innovation has always been at the core of my culinary journey. The Garlic Soup without Garlic perfectly embodies my love for pushing boundaries and blending diverse flavor profiles. Inspired by the legendary chef Ferran Adria, this recipe is all about playing with perceptions while ensuring every bite is deliciously satisfying.

Don’t let the name deceive you. The ‘garlic’ in this soup comes from the smoked paprika’s subtle notes, which are reminiscent of the sultry, smoky flavor that roasted garlic brings. Coupled with a kick from the cayenne, it beautifully mimics the warmth of traditional garlic soup without using any actual garlic.

The Perfect Companion

While this soup is a complete meal in itself, it also pairs wonderfully with a fresh salad or your favorite sandwich. Try it with a classic Caesar salad or a roast chicken sandwich. Just like how my dishes often mirror my upbringing—a blend of West Coast freshness and hearty Gujarati meals—the Garlic Soup without Garlic wonderfully complements both light and hearty dishes.

The secret to its hearty consistency lies in the thick slices of French bread that are soaked in the flavorful broth. As a finishing touch, a perfectly poached egg sits on top, adding a layer of richness to the already decadent soup.

So, next time you are in the mood for some soothing warmth, a nourishing meal, or a culinary adventure, the Garlic Soup without Garlic is sure to impress. Embrace the fusion of flavors and indulge in a bowlful of comfort.

  • 6 large eggs
  • 2 tablespoons olive oil
  • ½ cup diced onion
  • Parsley for garnish

Method

Step One

Pour 6 cups of chicken broth into a large saucepan. Bring to a low simmer over medium heat.

Step Two

Slice 1 loaf of French bread into thick slices. Toast the slices in a toaster or under the broiler until they are golden brown and crispy.

Step Three

In a small bowl, combine 1 tablespoon of smoked paprika, 1 teaspoon of cayenne pepper, 2 teaspoons of salt, and 1 teaspoon of black pepper. Mix them together until they are well blended.

Step Four

In a separate large saucepan, heat 2 tablespoons of olive oil over medium heat. Add ½ cup of diced onions to the pan and cook until they are soft and translucent.
