What You’ll Need

  • 1 large swamp taro, peeled and diced
  • 4 cups of chicken or vegetable broth
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup peeled and diced apple
  • 1 cup peeled and diced pear
  • 1/4 cup lemon juice
  • 1/2 cup half-and-half cream
  • 1/2 cup chopped fresh parsley
  • 6 sprigs of fresh mint for garnish
ALLERGENS: chicken broth, vegetable broth, garlic, olive oil, apple, pear, half-and-half cream

Method

Step One

Heat the olive oil in a large pot over medium heat. Once the oil is hot, add the chopped onion and minced garlic. Cook until the onion becomes translucent, about 5-7 minutes.

Step Two

Add the peeled and diced swamp taro to the pot. Stir well to combine with the garlic and onion, and let cook for about 5 minutes until the taro begins to brown.

Step Three

Pour in the chicken or vegetable broth, along with the diced apple and pear. Season with salt and black pepper then stir well. Increase the heat to high and bring the mixture to a boil. Once boiling, reduce the heat to low and allow the soup to simmer for about 30 minutes, or until the taro is tender.

Step Four

Remove the soup from heat and use an immersion blender to puree until smooth. If you don’t have an immersion blender, you can also carefully transfer the soup to a regular blender in batches to puree.

Step Five

Once the soup is pureed, return it to heat and stir in the half-and-half cream. Allow the soup to simmer for another 10 minutes.

Step Six

Remove the soup from heat a final time and stir in the lemon juice and fresh parsley. Taste and adjust the seasoning if needed.

Step Seven
