What You’ll Need

  • 2 large Giant Taro roots
  • 4 cups of coconut milk
  • 1/2 cup of water
  • 6 tablespoons of granulated sugar
  • 1/2 teaspoon of salt
  • 1 cinnamon stick
  • 6 servings of whipped cream (optional)
  • 6 sprigs of mint (for garnish)

Method

Step One

First, thoroughly wash the Giant Taro roots to remove any dirt. Then, peel them and cut into chunks. Be careful while handling taro because it can irritate skin due to its sap. You might prefer using gloves during this process.

Step Two

Place the cut taro chunks into a pot, adding water until it is just covering the taro. Boil it on high heat until the taro becomes soft and can be easily pierced with a fork. This should take about 15 to 20 minutes, depending on the size of your chunks.

Step Three

Once the taro is soft enough, drain the water from the pot. Add the 4 cups of coconut milk, 1/2 cup of water, 6 tablespoons of granulated sugar, 1/2 teaspoon of salt, and the cinnamon stick into the pot along with the cooked taro.

Step Four

Simmer the mixture on low heat, occasionally stirring it to prevent it from sticking to the bottom of the pot. You should continue this process until the taro becomes very soft and the potage thickens. It should take about 30-40 minutes.

Step Five

Remove the pot from heat. Fetch out the cinnamon stick and use an immersion blender or food processor to blend the mixture until it becomes smooth and creamy. If the potage is too thick for your liking, you can add a little more coconut milk or water and blend again until desired consistency is reached.

Step Six
