What You’ll Need

  • 1 tablespoon olive oil

  • 2 cloves garlic, minced

  • 2 apples, peeled and chopped
  • 6 cups vegetable broth
  • 1 cup orange juice
  • 1/2 cup heavy cream (optional)

Method

Stir in the orange juice. If you’d like, add the heavy cream for a creamier, richer soup. Cook for a further 5 minutes on low heat, stirring often.
