Whenever I whip up a stir fry, which is often, I fondly recall my abuela’s crowded kitchen, her stories filling the room as much as the tantalizing aromas. Her hands, deftly maneuvering the dishes she had prepared so many times before. Her stir fry was not this one, but the spirit of her kitchen remains in mine today. It really is more than just a recipie; it’s an ambience, a dance of flavors, just as I teach my dance students.

What You’ll Need
- 2 lbs chicken breast, cut into 1 inch cubes
- 4 tablespoons vegetable oil
- 2 tablespoons freshly grated ginger
- 4 cloves garlic, minced
- 1 large onion, thinly sliced
- 1 large bell pepper, cut into thin strips
- 2 medium carrots, thinly sliced
- 1 cup broccoli florets
- 1 zucchini, cut into thin strips
- 1 cup snap peas
- 3 tablespoons soy sauce
- 2 tablespoons honey
- 1 cup chicken broth
- 1 tablespoon cornstarch
- 1/2 cup chopped fresh pineapple
- Salt and pepper to taste
- 2 green onions, sliced
- Sesame seeds for garnish
Method
Step One
Season the chicken breast cubes with salt and pepper. Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add the chicken to the skillet and cook until it is browned and cooked through. Remove the chicken from the skillet and set it aside.
Step Two
In the same skillet, add the remaining 2 tablespoons of vegetable oil. Add the ginger and garlic, stirring frequently, until they are fragrant.
Step Three
Then, add the sliced onion, bell pepper, carrots, broccoli florets, zucchini and snap peas to the skillet. Stir fry the vegetables over medium heat until they are tender.
Step Four
In a separate bowl, mix together the soy sauce, honey, chicken broth and cornstarch until well combined. Pour this mixture over the stir-fried vegetables in the skillet and bring to a simmer.
Step Five
Return the cooked chicken to the skillet, and add in the chopped pineapple. Stir well to combine and coat all the ingredients with the sauce. Continue to cook for a few more minutes, until everything is heated through and the sauce has thickened.
Step Six
Adjust the salt and pepper to taste. Before serving, garnish the Ginger Chicken Stir Fry with the sliced green onions plus sesame seeds.
