What You’ll Need

  • 24 pearl onions
  • 5 medium-sized carrots
  • 1/3 cup of water
  • 2 tablespoons of unsalted butter
  • 1/4 cup of brown sugar
  • 1 cup of orange juice
  • 2 tablespoons of honey
  • Salt and pepper to taste
  • Sprigs of thyme for garnish

Method

Step One

Peel your 24 pearl onions and 5 medium-sized carrots. Once they’re peeled, cut the carrots into 2-inch long pieces. Set these aside for later.

Step Two

In a large, heavy sauté pan, bring 1/3 cup of water to a simmer over medium heat. Add the onions and carrots into the pan. Cover and cook for about 8 to 10 minutes, or until the vegetables are tender.

Step Three

Drain any leftover water from the pan. Add 2 tablespoons of unsalted butter, 1/4 cup of brown sugar, and 1 cup of orange juice into the pan over the cooked vegetables. Simmer this until the liquid reduces and glazes the vegetables. This should take about 10 minutes.

Step Four

Stir 2 tablespoons of honey into the pan with the vegetables and glaze. Season it with salt and pepper to your liking. Let it simmer for 1 more minute so the flavors meld together.

Step Five
