What You’ll Need

  • 1 cup of Millet flour
  • 1/2 cup of Sorghum flour
  • 1 teaspoon of Xanthan gum
  • 1/2 teaspoon of Salt
  • 1/2 teaspoon of Baking powder
  • 1 tablespoon of Sugar
  • 1/2 tablespoon of Yeast
  • 3/4 cup of warm Water
  • 2 tablespoons of Olive oil
  • 1 tablespoon of Fenugreek leaves
  • 1 tablespoon of fresh Coriander

Method

Step One

Start by combining all dry ingredients including 1 cup of millet flour, 1/2 cup of sorghum flour, 1 teaspoon of xanthan gum, 1/2 teaspoon of salt, 1/2 teaspoon of baking powder, 1 tablespoon of sugar, 1/2 tablespoon of yeast in a large bowl.

Step Two

Now, add in the 1 tablespoon of fenugreek leaves and 1 tablespoon of fresh coriander, and mix all the ingredients well to ensure the fenugreek and coriander are well dispersed in the dry mix.

Step Three

Next, make a well in the center of the dry ingredients, then pour in 3/4 cup of warm water and 2 tablespoons of olive oil. Stir the mixture until a dough starts to form.

Step Four

If the dough is too dry, add a little more water, but be careful not to add too much as you don’t want the dough to be overly sticky.

Step Five

Once a ball of dough forms, knead it for about 5 minutes until it is smooth and elastic. You can use a dough hook on a mixer or knead by hand.

Step Six

Cover the dough with a damp cloth and let it rise in a warm place for about an hour, or until the dough has doubled in size.

Step Seven

Divide the dough into small ball-sized portions and flatten with your hands or a rolling pin to get it about 1/8 inch thick.

Step Eight

Place the flattened dough on a hot griddle or cast-iron skillet and cook each side for about 2-3 minutes, or until golden brown.
