What You’ll Need
- 1 1/2 cups of lukewarm water
- 1 tablespoon of dry yeast
- 2 tablespoons of granulated sugar
- 3 1/2 cups of gluten-free flour mix
- 1 1/2 teaspoons of salt
- 1 tablespoon of baking powder
- 1 tablespoon of apple cider vinegar
- 2 large eggs
- 1 additional egg for egg wash
- Seeds for topping (sesame, poppy, etc.) – optional
Method
Step One
Start by combining the lukewarm water, dry yeast, and granulated sugar in a small bowl. Set it aside and allow it to sit for about five minutes or until it becomes frothy and bubbly. This indicates that the yeast has been activated.
Step Two
In a large bowl, mix together the gluten-free flour mix, salt, and baking powder. Once the yeast mixture is ready, add it into the dry ingredients along with the apple cider vinegar and the two large eggs. Mix all the ingredients together until it forms a soft dough. The dough should be firm enough to shape but not too sticky. If the dough appears to be too dry, add a bit more water; if it’s too sticky, add a bit more flour.
Step Three
Cover the dough and allow it to rise in a warm, draft-free place for about an hour or until it doubles in size. In the meantime, preheat your oven to 375 degrees Fahrenheit and line a baking sheet with parchment paper.
Step Four
Divide the dough into equal pieces according to how many bagels you wish to make. Roll each piece into a ball and then flatten slightly. Use your thumb to make a hole in the center of each ball and then gently pull the edges to enlarge the hole and shape the bagel. Place the shaped bagels on the prepared baking sheet.
Step Five
In a small bowl, beat the remaining egg and brush it over the top of each bagel. This will give the bagels a nice shine. If you wish, you can sprinkle your chosen seeds on top at this point.
Step Six
Bake the bagels in the preheated oven for about 20-25 minutes or until they become golden brown. Allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy your homemade gluten-free bagels!
