About Gluten-Free Bammy

When it comes to the world of bread, the Gluten-Free Bammy is undoubtedly a star. This delightful bread, popular in Jamaican cuisine, is a nutritious, gluten-free alternative that will fix your cravings while keeping your diet in check. Straddling the line between bread and cake, Gluten-Free Bammy is made from ingredients you may not have thought of incorporating in a bread recipe, lending it an unrivalled uniqueness in both taste and texture.

What sets our Gluten-Free Bammy apart is its main ingredient: Gluten-Free Bammy grated cassava. Cassava, or yuca as it’s also known, is a root vegetable extensively used in tropical regions cooking. It’s the secret ingredient that gives this bread its unique, slightly earthy flavor and wonderfully chewy texture. While cassava flour is often used to make Bammy, our recipe incorporates freshly grated cassava for an extra dash of authenticity.

Health Factor

One of the main reasons people are drawn to Gluten-Free Bammy is that it’s made with cassava, which is in itself gluten-free. This makes it a handy bread substitute for people on a gluten-free or grain-free diet. Also, cassava is rich in carbohydrates, meaning it can serve as a great energy source for the body. It’s also packed with fiber, which assists in regulating bowel movements and aids in digestion. Besides the healthy things about cassava, the other ingredients that go into making Bammy, like gluten-free flour and olive oil, contribute to making it a healthier option.

Culinary Pairing

Gluten-Free Bammy is a versatile bread, eaten on its own or paired with a variety of other foods. Its neutral yet slightly sweet flavor allows it to anchor many dishes and compliments both sweet and savory flavors. In Jamaican cuisine, Gluten-Free Bammy is traditionally served with a variety of dishes such as fish tea, jerk chicken, or dunked in savory coconut milk. However, its versatility allows for its integration into everyday meals outside the world of Jamaican cooking, too.

If you’re someone who likes to experiment with flavors, Gluten-Free Bammy could be toasted and slathered with almond butter for a quick breakfast. Alternatively, you could serve it alongside creamy vegetable soups for a complete meal. It can even act as a gluten-free pizza base, topped with your favorite ingredients.

Embrace the Gluten-Free Bammy, and enjoy a world where delicious bread doesn’t have to be a guilty pleasure, but an addition to a healthy and balanced diet.

What You’ll Need

  • 2 cups of gluten-free flour
  • 1 cup of grated cassava
  • 1 tsp of sea salt
  • 1/4 cup of coconut milk
  • 1 tsp of baking powder
  • 2 tbsp of olive oil
  • Warm water as needed
ALLERGENS: Coconut

Method

Step One

Start by preheating your oven to 350 degrees F (175 degrees C). Also, grease a baking sheet with some olive oil.

Step Two

In a large bowl, combine 2 cups of gluten-free flour, 1 tsp of sea salt, and 1 tsp of baking powder. Mix these together until well blended.

Step Three

Now, add 1 cup of grated cassava into the bowl with the flour mixture. Mix well to ensure the cassava is evenly distributed in the flour as this will give your bammy a smoother texture.

Step Four

Add 1/4 cup of coconut milk to the mixture. While stirring, gradually add warm water until the dough is pliable but not too sticky. The amount of water you need can vary, so it’s important to add it gradually.

Step Five

Once your dough is ready, form it into small round disks, about 1/2 inch thick. Place these disks onto the greased baking sheet.

Step Six

Put the baking sheet in the preheated oven, and bake the bammies for about 30 minutes, or until they’re lightly browned and cooked through.

Step Seven

Finally, remove your bammies from the oven. They are best served warm and can be enjoyed on their own or with a dip of your choice.

Enjoy your Gluten-Free Bammy!
