About Gluten-Free Bannock
Our featured bread this week transcends traditional comfort food, creating a gluten-free version of a classic Indigenous staple – the Gluten-Free Bannock. This simple, warm, deliciously tender bread is perfect for those who want to enjoy a doughy delight without the gluten. Yet, it preserves the rich, hearty flavor that has made Bannock a quintessential part of meals across cultures.
The Roots of Bannock
Bannock, originally from Scotland, found its way into Indigenous cultures across North America thanks to fur traders. Today, it holds a significant place in cultural gatherings and social events. While traditional Bannock is fried, our Gluten-Free Bannock caters to the health-conscious without sacrificing taste and texture. Unlike many gluten-free breads which can be dry or crumbly, this flour and tapioca mix creates a bread that’s moist, fluffy, and gratifyingly chewy.
Pairs Well With…
Whether you’re whipping up a breakfast feast, an elaborate dinner, or a simple snack, Gluten-Free Bannock fits right in. Its lightly sweetened yet savory flavor profile makes it incredibly versatile. Try it toasted with a generous heaping of homemade Nutella, or dip it in your favourite soup – it’s sure to elevate the comfort factor.
Another specialty this bread is commonly compared to is the beloved Southern cornbread. Likewise humble in its roots, the textures and flavors are similar, though bannock is less crumbly. Our Bannock also bears a pleasant resemblance to the Native American Fry Bread. Hearty and filling, it can be enhanced with honey, jam, stew or anything your heart (and stomach) desires.
A Delight in Every Bite
The combination of gluten-free all-purpose flour with tapioca flour in this recipe lends a cushy texture to the bread that’s undeniably satisfying. An added lift from the gluten-free baking powder gives our Bannock its signature fluffiness, while the small touch of melted butter lends a gentle richness to its taste. The result is a bread you’ll look forward to savoring, whether enjoying a leisurely breakfast, a quick lunch or a cozy dinner.
Feel free to try our Gluten-Free Bannock recipe and experience a culinary journey through culture, comfort, and gluten-free gourmandise.
What You’ll Need
- 1 1/2 cups Gluten-Free All-Purpose Flour
- 1/2 cup Tapioca Flour
- 2 teaspoons Gluten-Free Baking Powder
- 1/2 teaspoon Salt
- 2 tablespoons Sugar
- 2 tablespoons Unsalted Butter, melted
- 3/4 cup Water (may need more as required)
- 1 tablespoon Olive Oil for frying
Method
Step One
Begin by mixing together the gluten-free all-purpose flour, tapioca flour, gluten-free baking powder, sugar, and salt. Stir them all until they are properly combined.
Step Two
Add the melted unsalted butter to your dry ingredients. Mix well to ensure the butter is evenly distributed throughout the dry mixture.
Step Three
Slowly add water to the mixture. Stir it continuously as you pour to avoid any lumps.
Step Four
Once your dough forms a sticky ball, transfer it onto a lightly floured surface. Knead the dough until it becomes soft and elastic, adding more water if necessary.
Step Five
Divide the dough into smaller pieces and shape each portion into a circle about 1/2 inch thick.
Step Six
Heat the olive oil in a frying pan over medium heat. Once it’s hot, add the bannock bits.
Step Seven
Cook each side for about 3-4 minutes, or until they are golden brown and puffed up. Once they are done, transfer them onto a paper towel to drain excess oil.
Step Eight
Serve the gluten-free Bannock warm. Enjoy as a snack or as a side with your different dishes.
