What You’ll Need

  • 2 1/2 cups Gluten-Free Flour Blend
  • 1 tablespoon Gluten-Free Baking Powder
  • 1 teaspoon Salt
  • 1 tablespoon Granulated Sugar
  • 1/2 teaspoon Xanthan Gum
  • 1 1/4 cups Warm Water (110°F to 115°F)
  • 2 tablespoons Active Dry Yeast
  • 2 large Eggs
  • 1/4 cup Olive Oil
  • 1 tablespoon Rice Vinegar
  • 1 tablespoon Honey
  • Vegetable Oil (for brushing)

Method

Step One

Begin by combining the following dry ingredients in a large bowl: 2 1/2 cups of gluten-free flour blend, 1 tablespoon of gluten-free baking powder, 1 teaspoon of salt, 1 tablespoon of granulated sugar, and 1/2 teaspoon of xanthan gum. Mix everything until they blend well.

Step Two

In a separate bowl, pour 1 1/4 cups of warm water, within the range of 110°F to 115°F. Add 2 tablespoons of active dry yeast into the water and allow it to dissolve completely.

Step Three

Crack and beat 2 large eggs in a separate small bowl. Add these beaten eggs to the yeast and water mixture. Include 1/4 cup of olive oil, 1 tablespoon of rice vinegar, and 1 tablespoon of honey. Stir all these ingredients until they mix uniformly.

Step Four

Slowly pour the wet ingredients into the large bowl containing the dry ingredients. Stir everything together until a sticky dough forms. If the dough is too dry, consider adding a bit more warm water until the desired consistency is achieved.

Step Five

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. Divide the dough into equal balls and place them on the lined baking sheet. Flatten each dough ball slightly with the palm of your hand.
