The Joy of Gluten-Free Brioche

Though made without traditional wheat flour, you’ll be surprised how closely our Gluten-Free Brioche recipe mimics the texture and taste of the original French bread. This bread is particularly popular for special occasions and breakfast, but trust us when we say that it’s so good, you’ll find excuses to include it in your day-to-day meals.

Comparisons and Complimenting Dishes

While brioche is a unique bread in its own right, it shares similarities with several other recipes which you might have tried. It’s similar in thought to challah, although traditionally, brioche is more butter-forward. You could consider this bread as the French cousin to the Italian Panettone, with both being traditionally sweet and rich in eggs and butter.

As for dishes that this gluten-free brioche would pair well with, it’s a fantastic addition to your breakfast lineup alongside scrambled eggs or fruit salads.

But why limit it to just breakfast? Use this bread to elevate your chicken salad sandwiches or to mop up the broth from a bowl of French onion soup. And for the sweet tooth, it makes an excellent base for French toast or a rich bread pudding.

Whichever way you enjoy it, baking and eating Gluten-Free Brioche is an adventure in itself, one that’s sure to bring sheer joy to your culinary journey.

What You’ll Need

  • 1 1/2 cups gluten-free flour blend
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon xanthan gum
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 3 large eggs
  • 1/4 cup warm milk (lactose-free if needed)
  • 1 teaspoon apple cider vinegar
  • 4 tablespoons unsalted butter, melted (dairy-free if needed)
  • 1 egg white, for brushing on top of the loaves
  • 2 tablespoons honey
ALLERGENS: Eggs, Milk, Butter

Method

Step One

Begin by combining your dry ingredients in a large bowl. This includes the gluten-free flour blend, granulated sugar, salt, xanthan gum, and active dry yeast. Stir until well mixed.

Step Two

In a separate bowl, whisk together the 3 eggs, warm milk, and apple cider vinegar. Once they are combined, gradually add the melted butter while continuously whisking the mixture.

Step Three

Now, slowly pour the wet ingredients into the bowl of dry ingredients, mixing until all are combined. Once it forms a sticky, thick dough, continue to mix for another 2 minutes for the dough to become elastic.

Step Four

Cover the dough with a clean cloth and allow it to rise in a warm, draft-free area until it has nearly doubled in size. This should take about one to two hours.

Step Five

Once the dough has risen, preheat your oven to 375 degrees Fahrenheit and line a baking tray with parchment paper. Divide the dough into two equal parts and shape into loaves. Place on the prepared baking tray.

Step Six

In a small bowl, whisk together the egg white and honey. This will be used to brush on top of the loaves. Generously brush this mixture on top of each loaf.

Step Seven

Finally, bake the loaves in the preheated oven for about 25-30 minutes or until the tops are golden brown. Let it cool before slicing. Enjoy your delicious gluten-free brioche!
