What You’ll Need

  • 1 cup warm water
  • 2 teaspoons sugar
  • 2 1/4 teaspoons dry active yeast
  • 3 cups gluten-free flour
  • 1 teaspoon xanthan gum (omit if your flour blend includes it)
  • 2 teaspoons salt
  • 1/2 teaspoon baking powder
  • 1 teaspoon apple cider vinegar
  • 2 eggs (room temperature)
  • 2 tablespoons olive oil
  • Additional olive oil for brushing on top
  • Coarse sea salt for sprinkling on top

Method

Step One

Begin by combining the warm water and sugar in a small bowl. Stir the mixture until the sugar has completely dissolved. After that, sprinkle the yeast over the water and let it sit for around 5 to 10 minutes, or until it becomes frothy.

Step Two

In a separate large bowl, mix together the gluten-free flour, xanthan gum (unless your flour blend already contains it), salt, and baking powder.

Step Three

Create a well in the center of your dry ingredients. Then, pour the yeast mixture, apple cider vinegar, eggs, and olive oil into it. Gently stir these ingredients until they are thoroughly mixed together.

Step Four

Transfer the dough onto a floured surface and knead it gently for about 2 to 3 minutes. Add more flour if necessary to make a soft dough. It should be slightly sticky but not too much that it’s unmanageable.

Step Five

Place the dough in an oiled bowl and cover it with a clean kitchen towel. Leave it to rise in a warm place for about an hour, or until it has doubled in size.

Step Six

Preheat your oven to 200°C (392°F). Then, on a baking sheet lined with parchment paper, pat the dough into a loaf shape. Brush extra olive oil on top of the dough and sprinkle it with coarse sea salt.

Step Seven

Bake the Ciabatta for about 25 minutes, or until the bread is golden brown and sounds hollow when you tap the bottom. Let it cool on a wire rack before slicing and serving.
