What You’ll Need

  • 2 cups of gluten-free self-raising flour
  • 1/2 teaspoon of salt
  • 2 tablespoons of butter
  • 3/4 cup of milk
  • 1/2 cup of water
  • Extra gluten-free flour, for dusting

Method

Step One

Preheat your oven to 200°C (180°C fan-forced). Line a baking tray with non-stick baking paper.

Step Two

In a large bowl, combine the gluten-free self-raising flour and salt.

Step Three

Using your fingertips, rub the butter into the flour mixture until it resembles fine breadcrumbs.

Step Four

Make a well in the centre of the flour-butter mixture. Gradually add the milk and water, using a round-bladed knife to stir until the mixture comes together in a soft dough.

Step Five

Transfer the dough onto a lightly floured surface. Knead gently to bring it together. Shape it into a disc about 20cm in diameter.

Step Six

Place the dough on your prepared baking tray. With a sharp knife, mark a cross on top of the dough, about 1cm deep. This mark will help the damper to cook evenly.

Step Seven

Bake for 25-30 minutes or until golden and the damper sounds hollow when tapped on the base.

Step Eight

Remove from the oven and let it cool slightly before serving. Enjoy your gluten-free damper warm, with butter and jam or honey if you like.
