  • 2 1/4 teaspoons active dry yeast
  • 3 1/2 cups gluten-free flour
  • 2 teaspoons xanthan gum (skip if your flour blend contains it already)
  • 2 teaspoons salt
  • 4 tablespoons olive oil
  • 1 cup spinach, finely chopped
  • 1 cup feta cheese, crumbled
  • 1 medium-sized onion, finely chopped
  • 2 tablespoons olive oil for frying

Method

Step One

Start by adding the warm water and sugar to a large bowl. Stir until the sugar is dissolved. Sprinkle yeast over the water and let it sit for about 5 minutes, or until it becomes frothy.

Step Two

In a separate bowl, mix together the gluten-free flour, xanthan gum (if using), and salt. Once the yeast mixture is frothy, slowly add the flour mixture while stirring. Now, add in the olive oil. Continue mixing until a ball of dough forms.

Step Three

Heat the 2 tablespoons of olive oil in a frying pan over medium heat. Place the filled dough in the pan and cook for about 2 minutes on each side, or until golden brown. Repeat this process with the remaining dough and filling.
