What You’ll Need

  • 1 cup warm water
  • 2 tablespoons white sugar
  • 2 tablespoons active dry yeast
  • 1 cup brown rice flour
  • 1/2 cup potato starch
  • 1/2 cup tapioca flour
  • 2 teaspoons xanthan gum
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 2 eggs
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon honey
  • 2 tablespoons melted butter for brushing
  • 1 tablespoon sesame seeds for topping (optional)

Method

Step One

Start by combining the warm water and white sugar in a small bowl until the sugar is dissolved. Stir in the active dry yeast and let it sit for about 10 minutes, until the yeast mixture becomes foamy.

Step Two

In a separate larger bowl, mix together the brown rice flour, potato starch, tapioca flour, xanthan gum, and salt. Make sure all these dry ingredients are mixed well to ensure even distribution of the salt and xanthan gum which will aid in the bread’s texture and rise.

Step Three

To the dry ingredients, add the olive oil, eggs, apple cider vinegar, and honey. Begin mixing these together, then slowly pour in the yeast mixture. Continue mixing until all ingredients are fully combined and a sticky dough is formed.

Step Four

Divide the dough into 6 equal parts and form each into a round roll shape. Place the rolls onto a greased baking sheet or one lined with parchment paper. Let the rolls rise in a warm, draft-free area for about 40-45 minutes.

Step Five

While the rolls are rising, preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Once the rolls have risen, brush the tops with the melted butter and sprinkle with sesame seeds, if using.

Step Six

Bake the rolls in the preheated oven for 20-25 minutes, or until the tops are golden brown. Remove from the oven and let them cool on the baking sheet for about 10 minutes, then transfer to a wire rack to cool completely.
